Finca San Nicolás is a 5-manzana farm situated in the high-altitude Chalatenango region of El Salvador, an area celebrated for its ideal coffee-growing conditions. Owned and operated by Edgardo, the farm is primarily planted with Pacas and Pacamara varieties, both of which thrive in the region’s rich soil and cool climate. In addition to these cultivars, Finca San Nicolás is also home to a small selection of Gesha trees, which produce exceptionally delicate and complex coffees.
This particular Gesha lot is naturally processed, a method that enhances its vibrant fruit character and layered acidity. To achieve this, Edgardo meticulously selects only the ripest cherries before drying them on raised beds for approximately 20 days, depending on weather conditions. This slow drying process allows the coffee to develop its distinctive flavour profile, resulting in a cup with bright, juicy acidity reminiscent of fresh lime and passionfruit, balanced by the deep sweetness of ripe blackberry.
