From Costa Rica’s renowned West Valley, this exceptional microlot comes from Cerro San Luis Micromill, a family-run operation owned and managed by siblings Alexander and Magali Delgado and their families.
The Delgado family has built Cerro San Luis around careful lot separation, diverse coffee varieties, and meticulous processing. Their farms are planted with an impressive range of cultivars, including Caturra, Bourbon, Villa Sarchi, Maragogype, and the celebrated Kenyan variety SL-28.
For this lot, ripe SL-28 cherries are carefully harvested, sorted, and delivered to the family’s micromill, where they undergo Cerro San Luis’ White Honey Process. The cherries are promptly depulped before the coffee is placed in thin layers on raised beds for the first stage of drying. It is then transferred to a covered patio and regularly turned until drying is complete.
The high elevations and cooler microclimates of the West Valley encourage slower cherry maturation and greater sugar development, while the combination of SL-28 and White Honey processing creates a distinctive expression of both variety and origin.
