The Story

At Pallet Coffee Roasters, we are continually searching for coffees that showcase not only exceptional flavour, but also the people and places behind every cup. This release comes from Luz Helena Salazar, a producer whose dedication to quality and innovation has helped shape some of the most exciting coffees coming out of Colombia today.

Grown at Finca La Leona in Quindío, this Natural Caturra is a beautiful expression of careful farming, thoughtful processing, and a deep respect for terroir. Following harvest, the cherries undergo a controlled 45-hour aerobic fermentation before being slowly dried, creating a cup that is vibrant, expressive, and full of character.  

What we love most about this coffee is its balance. Bright notes of mandarin and juicy grape bring energy and sweetness to the cup, while a rich dark chocolate finish adds structure and depth. The result is a coffee that feels both approachable and complex—equally enjoyable for everyday brewing and for those who love exploring the nuances of single-origin coffee.
