Finca Noruega, founded by Los Naranjos Coffee and part of the Renacer Project, represents a new generation of Salvadoran producers focused on both precision and sustainability.
The farm uses soil studies to guide fertilization, manual weed control without herbicides, and water-conservation systems to protect groundwater. The varietal, Pacamara, is a hybrid of Pacas and Maragogipe, often called an “elephant bean” because of its unusually large bean size.
Harvest timing is determined through Brix measurements, ensuring optimal cherry maturity before processing. Their anaerobic natural process is carefully monitored for pH and sugar development, with controlled 72-hour fermentation and slow drying at 1,400 MASL (Meters Above See Level).
