In the southern mountains of Guatemala in the Santa Rosa region, this lot of coffee is produced by 250 small holder farmers.
Harvesting takes place from December to February to ensure peak ripeness. The farmers deliver their cherry to the wet mill in one go for optimal results and crop uniformity.
Upon arrival, the cherry undergoes a process of removing small sticks and leaves before being sun dried on patios until reaching a desired moisture content of 12%.
