At El Vergel Estate, Martha Montenegro assembled a talented group of women to undertake the meticulous task of harvesting this micro-lot, which is conveniently located adjacent to the washing station, eliminating the need to transport heavy coffee bags across the farm.
Martha launched her women's initiative in 2018, starting with a modest team of eight women, which has now expanded to over 15 skilled individuals dedicated to the project.
With the help of Martha's talented sons, Elias & Shady Bayter, the coffee undergoes a 60-hour anaerobic fermentation process in stainless steel tanks, enhancing its flavour profile. This is followed by sun exposure with periodic drying sessions over a span of 35 days, culminating in mechanical finishing before a two-month resting period in grain pro storage to ensure optimal maturation.
