Fazenda Santuário Sul is a coffee farm and project by Luiz Paolo Pereira, co founder of Carmo Coffees, alongside his industry partners. Located in Carmo de Minas, Brazil, the farm is part of a wider vision known as the ‘Santuario Project’ which pools resources and bridges the collective knowledge of renowned coffee experts throughout multiple producer countries.
Today, in addition to traditional Brazilian varieties, like Yellow Bourbon, the farm has more than 30 exotic varieties of coffee, differentiated growing practices, such as shaded fields, and innovative processes.
This lot is an Ethiopian Heirloom varietal from Yirgacheffe in Ethiopia. Luiz has planted these trees at the top of his farm at an altitude of around 1,380 - 1,430 meters above sea level.
This coffee has been processed using a honey process where the cherries are hand picked before being depulped and sun dried with the mucilage (flesh of the fruit) still attached.
We really enjoy the delicate sweetness of this coffee and it is a perfect easy going filter option.
