This lot from Deraro is picked ripe and delivered to the washing station within 8 hours of picking by local smallholder farmers.
The coffee cherries are then floated to eliminate underripe or broken cherries. Once sorted the coffee is put through a dry anaerobic fermentation process for 90 hours. After fermenting the coffee is set to dry on raised beds and hand-sorted to remove any unwanted cherries ti it reaches 11% moisture.
We are loving the sweet fruity aroma and flavours of this coffee. It is very sweet and juicy while still bing very clean and balanced.
