Run by Elias and Shady Bayter and their mother Martha, El Vergel is a 400 hectare farm located in Fresno, Tolima. The farm is separated into multiple smaller plots at different altitudes, each planted with different varietals including Caturra, Bourbon, Java and Gesha.
This is a natural processed Caturra lot (known as Guava Banana) where the whole cherries have been aerobically fermented in wide, shallow tanks for 14 hours before being transferred into special steel tanks and submerged in cold water for 48-52 hours of cold anaerobic fermentation. This dual fermentation process helps to bring out sweet, fruity but very clean profile on this coffee. After fermentation the whole cherries are dried on raised beds for 12 - 15 days. After drying the cherries are aged in grain pro bags in a humidity controlled vault for one and a half months.
We are loving this coffee as a pour over option showcasing amazing fruit forward, sweet flavours but can also be used as a nice very light espresso option.
