David Flores, the general manager of Finca El Morito, is a third-generation coffee producer who oversees the operations of the farm and its network of neighboring family farms. His role is vital in ensuring the success of both the farm and the surrounding communities.
Located in the San Jose de Lourdes district of the Province of San Ignacio, within the Cajamarca region of North Peru, Finca El Morito covers an area of 150 hectares. The farm cultivates a variety of coffee beans, such as Yellow Caturra, Bourbon, Typica, Geisha, Marshall, Catuai, and Catimor.
Through meticulous practices like selective harvesting and a waterless pulping process, Finca El Morito produces high-quality coffee. The beans undergo washing and fermentation before drying under transparent calamine dryer modules and solar tents for an average of 26 to 30 days.
