This coffee comes from multiple small holder producers from the Yrigacheffe region.
Ripe cherries are delivered to a central washing station where the are graded and then processed.
This lot is a washed processed lot that has depulped and then fermented in tanks for 36 hours while the mucileage breaks down by natural enzymes, before easily being rinsed away. The beans are then placed on elevated drying beds where they will dry for 9-15 days.
We really enjoy this coffee as both a tasty light filter option or a juicy and refreshing espresso option.
