Fazenda Santuário Sul is a coffee farm and project by Luiz Paolo Pereira; co founder of Carmo Coffees, alongside his industry partners. Located in Carmo de Minas, Brazil, the farm is part of a wider vision known as the ‘Santuario Project’ which pools resources and bridges the collective knowledge of renowned coffee experts throughout multiple producer countries.
Today, in addition to traditional Brazilian varieties, like Yellow Bourbon, the farm has more than 30 exotic varieties of coffee, differentiated growing practices, such as shaded fields, and innovative processes.
This lot is a Sudan Rume varietal, an ancient varietal, originally hailing from what is now South Sudan’s Boma plateau.
The cherries are hand-picked to ensure perfect maturity, then the team measure the Brix levels of the cherries. If they are higher than 23, the cherries are used for anaerobic fermentation. If the Brix levels are lower than 23, they are destined to become naturals.
These selected cherries were anaerobically fermented in the adapted dairy tank for 72 hours without any movement, then the tank is opened to check the PH level. When the PH of the mucilage inside the fermenting cherries reaches 4.5, it is time to take them out.
After fermentation the cherries are removed and left to dry with the cherry still intact. Drying takes between 18 to 21 days, depending on the weather.
This coffee showcases a crisp, sweet and boozy flavour profile with a lingering hazelnut finish.
