This coffee comes to us from Diego Robelo and the amazing people from the Aquiares Estate and Community in Turrialba, Costa Rica. Diego is the General Manager of Aquiares Estate and oversees all of the harvesting, processing and quality control.
The community of Aquiares sits in the midst of the farm and is home to almost 2,000 people. The town boasts a century-old primary school, a youth sports program, a recycling committee, an early childhood nutrition center and a church built in 1925, which is a National Architectural Historic Monument.
In the 1990s, the farm began a campaign to improve home ownership in the local community. Each worker was given a bonus for their years of service and the farm gave assistance to people applying for government loans. Today 96% of the Aquiares employees own their own houses.
The farm and the community are mutually connected. The farm provides services, land, security and honest jobs. In return, the coffee farm has benefited from a well-educated community and relies on highly skilled professionals from it's community to continue functioning. Such a level of interdependence has helped contribute to the sense of pride that Aquiares takes in both it's community and coffee.
This lot is called Entre Rios, translating to 'Between Rivers'. It is made up of Marsellesa and Red Obatá varietals that are grown on section 7 of the farm at an elevation of 1,100 to 1,400 meters above sea level. The cherries are harvested before being depulped and then mechanically washed for 32 hours and dried at temperatures between 45ºC - 55ºC.
We have purchased this coffee for the last three years and it has been a staple part of some of our blends, but this is our first time releasing it as a single origin lot. We are really enjoying this as both filter and an espresso option.
