Santiago Caro is a young, driven, second-generation producer growing a rare Bourbon-Caturra mutation, Bourbon Chiroso and Caturra Chiroso. These varieties were originally planted by his father because of their notable production, but the resulting cups have been good enough to place in the Cup of Excellence, placing 15th in 2021.
His washed coffees are fermented in stainless steel tanks for 5-8 days to remove mucilage, and then dried on raised beds.
This coffee is very sweet and juicy with deep purple flavours, it is an outstanding filter option.
